I love to eat. Like, really love it. I live to eat and definitely not the other way around. And I’m a total sugar addict which makes getting rid of baby weight a real chore. Yep, baby weight. “But isn’t your youngest child basically a preschooler?”, you ask. Yes, yes she is. The struggle has been real my friends, really real. Haha.
I just want to eat ALL the things, ALL the time. Recently, one of my kick ass mom friends and I challenged eat other to a week of no sugar. It’s going well and I’ll be honest, I feel a million times better than I have in a while. But I’ll also be honest and admit I could literally never give up sugar on my own. By hour three on day one I was in need of intervention. So, thank you Rachel for keeping me accountable.
Enter these green beans. Spicy. Savory. Delish. Easy. They are a staple dinner side dish in our house but I’ve been eating them as a snack all week and loving it. Make a batch and keep ’em in fridge for when you need to munch. They work really well hot or cold.
GINGER SRIRACHA GREEN BEANS
- 16 oz. green beans, washed and trimmed.
- 0.5 TBSP grated ginger (or more to taste)
- 1 TBSP chili garlic paste (the chunky sriracha works best here)
- 1 tsp olive oil
Heat olive oil on medium high in a skillet. Add green beans and stir fry on high for 4-5 minutes. Add a little water (like a quarter cup) to the pan while still on high and quickly cover it. Reduce heat to medium high and steam for another few minutes (more or less depending on how crunchy you like your veggies….hint: you like them fairly crunchy because you are not in an elementary school). Take the cover off and allow remaining water to evaporate. This should only take a minute or two. When your beans are at your preferred level of crunch, turn off heat and add the heaping scoop of ginger and chili garlic paste. Toss to mix well. Serve warm or allow them to cool and store in the fridge for up to 4 days.
Pro TIP: use french green beans if they are an option. They are thinner and crunchier and basically my favorite! My non-veggie loving husband prefers them too so they’re golden for your picky eaters!
